My grandfather told me; hickory, white oak or ash. Better to be a bit longer than not long enough. Hickory is the heaviest and hardest. Ash is the lightest and softest. White oak is in between and probably will work as a reasonable compromise.

You could carve a walking staff from a piece of White Birch, that’s what a guy near my house uses to do large outdoor carvings.
