Well you need a stove or you’ll be cooking over the fire. Don’t forget to bring stuff for s’mores. Other than that, the easiest stuff to cook is something you can make in one pot or frying pan, omlettes, hash, stew, soup, chilli, hot dogs are ubiquitous camping food. You can also bring tinfoil and and wrap up meat or veggies in them. Carefully fold the tinfoil and place it near the fire and turn it every 1/2 hour or so. It’s a long cooking process, but it’s a nice, and relatively easy way to roast food, peppers, onions and potatoes are particularly tasty when prepared this way, meat, unless it’s pre-cooked, will take much longer. Stuff to make sandwiches with would also be easy for the lunch you had in mind, and an instant pancake or crepe mix would hit the spot for breakfast when camping. Don’t forget to bring some bacon, it’s a necessity when camping.

Get yourself a cast iron dutch oven, a bag of charcoal, and a dutch oven cook book. You will eat like royalty and other campers will drool.
With that dutch oven you can make great meals in one pot. You can bake a cake, make frittatas, chicken potato bake, even make a cobbler using berries you picked while camping.
Easy clean up too.
