My Garmin 60CSx has to be on for the entire time. I assume that it would be the same for other models. A good set of batteries should last a full day of hiking, and in case they don’t, just carry an extra set.

Most hiking GPS units have route tracking as a feature and they also have extended battery life. Yes, you must leave the unit on to track your route but you should have no problem getting a day out of the batteries, particularly with Lithium Ion which most units now use.
