It sounds like you won’t have to backpack it in, so unless you want to try real cooking outdoors, I’d go with easy stuff, like canned goods. Just don’t forget a can opener!

If you do want to be a little more creative, try soaking corn on the cob (with the husk on) in water for an hour or so, then roast it for a few minutes in the husk over a bed of coals.

And if you have a dutch oven, you can make some amazing meals. We taught our scouts to cook in dutch ovens by stacking them. Put a bed of coals down on the bare ground or in your fire pit, put a dutch oven on that, put more coals on the lid, set another dutch oven on top of that, and so on. We’ve had them stacked 4-5 high. Of course, that makes checking the status of the bottom oven a little tough… Google “dutch oven recipes” if you want to see some great stuff. Oh, and a tip – line the oven with foil. It makes cleanup MUCH easier!

If you are a meat eater, then nothing is better the the smell of bacon at a campsite. We like to bring eggs to scramble with some cheese and green onions and bell pepper thrown in, plus tortilla’s as they don’t smash up like bread does. For dinner, keep it simple with burgers, potato salad(make or buy ahead of time) and baked beans. Don’t forget the hamburger buns and accompaniment’s. Smores for dessert and hot chocolate too.

    Dinner:
Marinate a steak in a ziploc bag, chill overnight, and toss in your cooler.

It will be tasty when you grill it for dinner. London broil is an inexpensive cut — for marinade, I use a bottle of Wishbone Zesty Italian sald dressing.

Another easy idea is to buy a prepared pork tenderloin — it is already marinated (teriyaki or barbeque sauce) just toss it on the grill.

Add a bagged sald and dressing, and pre-cooked baked potatoes.
I microwave mine until almost done, cut in large pieces, add salt and pepper, butter and some onions. Wrap in foil and finish on the grill for 5 minutes.

    Breakfast:
Fresh fruit salad, maple sausage or bacon on the grill, and blueberry muffins; coffee or juice.

    Have fun!
